How To Make Vegan Kimchi

Kimchi, a traditional Korean dish, is gaining popularity worldwide due to its unique flavors and health benefits. If you’re a vegan or just looking for a plant-based alternative, we’ve got you covered. In this recipe, we will be preparing a delicious vegan version of kimchi.
Ingredients:
1 head of Napa cabbage
3 tablespoons of sea salt
3 cups of water
1 tablespoon of grated ginger
2 cloves of garlic, minced
1 tablespoon of gochugaru (Korean red pepper flakes)
1 tablespoon of soy sauce
2 teaspoons of sugar
4 green onions, thinly sliced
Instructions:
1. Cut the Napa cabbage into quarters and remove the core. Chop it into bite-sized pieces.
2. In a large bowl, dissolve the sea salt in water. Add the Napa cabbage pieces and let them soak for 2 hours.
3. Rinse the cabbage pieces under cold water to remove excess salt. Place them in a colander to drain.
4. In a separate bowl, mix together the grated ginger, minced garlic, gochugaru, soy sauce, and sugar.
5. Add the sliced green onions to the bowl and mix well.
6. Gently squeeze the excess water out of the cabbage and add it to the seasoning mixture. Use your hands to massage the seasoning into the cabbage, ensuring that every piece is coated.
7. Transfer the kimchi into a clean jar, pressing it down firmly to remove any air bubbles. Leave some space at the top of the jar as the kimchi will ferment and expand.
8. Seal the jar with a tight lid and let it sit at room temperature for 1-2 days to ferment. Then, refrigerate to slow down the fermentation process.
9. After a few days, your vegan kimchi will be ready to enjoy!
