The first step in making kimchi is preparing the cabbage. You will need:
- 1 medium-sized Napa cabbage
- 1 cup sea salt
- Water for soaking
Chop the cabbage into bite-sized pieces and soak it in a large bowl of water with the sea salt. Let it sit for about 2 hours until the cabbage leaves are softened.
While the cabbage is soaking, you can start preparing the kimchi paste. Here’s what you’ll need:
- 2 tablespoons Korean red chili pepper flakes (Gochugaru)
- 1 tablespoon fish sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 tablespoon sugar
Mix all the ingredients together in a small bowl to create a spicy and flavorful paste. Adjust the amount of chili pepper flakes according to your preference for spiciness.
After the cabbage has soaked, rinse it thoroughly to remove excess salt and drain the water. Then, using gloves, massage the kimchi paste into the cabbage leaves, making sure to coat each piece evenly.
Finally, transfer the kimchi into a clean glass jar, pressing it down firmly to remove any air bubbles. Leave about an inch of space at the top of the jar to allow room for fermentation.
Seal the jar tightly and let it sit at room temperature for 2 to 3 days to allow the flavors to develop and fermentation to occur. After this initial fermentation period, you can store the kimchi in the refrigerator to slow down the fermentation process.
