Easy Kimchi Recipe

To start off, you will need the following ingredients:

  • 1 medium-sized Napa cabbage
  • 1/4 cup salt
  • 3 cups water
  • 1 tablespoon grated ginger
  • 3 cloves garlic, minced
  • 2 tablespoons Korean red pepper flakes
  • 1 tablespoon fish sauce (optional for non-vegetarians)
  • 1 tablespoon sugar
  • 4 green onions, chopped
  • 2 carrots, julienned

To prepare the cabbage, cut it into quarters and remove the core. Then, thinly slice the cabbage and place it in a large bowl. Dissolve the salt in water and pour it over the cabbage. Let it sit for about 2 hours, tossing it every 30 minutes.

In the meantime, let’s prepare the Kimchi paste. In a separate bowl, combine the grated ginger, minced garlic, Korean red pepper flakes, fish sauce (if using), and sugar. Mix everything together until it forms a thick paste.

After 2 hours, rinse the cabbage thoroughly under cold water to remove excess salt. Squeeze out the excess water and place the cabbage in a clean bowl. Add the Kimchi paste to the cabbage and mix it well. Make sure every piece of cabbage is coated with the spicy paste.

How to make Kimchi – Step-by-Step Guide

Now, let me guide you through the process of making Kimchi:

  1. Start by washing your hands and sterilizing your utensils.
  2. Prepare a glass jar or container with an airtight lid.
  3. Transfer the Kimchi mixture to the jar, pressing it down firmly to remove any air bubbles.
  4. Seal the jar tightly and place it in a cool and dark place for fermentation.
  5. Let the Kimchi ferment for at least 2 days, up to a week, depending on your preference. Remember to burp the jar every day to release any built-up gases.
  6. Once the Kimchi has reached your desired level of fermentation, move it to the refrigerator to slow down the fermentation process.
