Ingredients:

  • 1.5 pounds of beef stew meat, cut into bite-sized pieces
  • 1 onion, thinly sliced
  • 4 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, minced
  • 3 tablespoons of soy sauce
  • 2 tablespoons of gochujang (Korean red pepper paste)
  • 2 tablespoons of brown sugar
  • 2 teaspoons of sesame oil
  • 3 cups of beef broth
  • 2 carrots, sliced
  • 3 potatoes, peeled and cut into chunks
  • 1 cup of sliced mushrooms
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large pot, heat some oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.
  2. In the same pot, add the onion, garlic, and ginger. Sauté until the onion becomes translucent and fragrant.
  3. Add the soy sauce, gochujang, brown sugar, and sesame oil to the pot. Stir well to combine.
  4. Return the beef stew meat back to the pot, along with any juices that may have accumulated. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beef is tender.
  5. Add the carrots, potatoes, and mushrooms to the pot. Continue cooking for an additional 30 minutes, or until the vegetables are cooked through.
  6. Season with salt and pepper to taste. Garnish with chopped green onions.

  • 1 teaspoon of sesame oil
  • 2 cups of water
  • 1/2 cup of tofu, cubed
  • 2 green onions, chopped

Instructions:

  1. In a large pot, cook the pork belly over medium heat until it starts to render its fat.
  2. Add the onion and garlic to the pot. Sauté until the onion becomes translucent.
  3. Add the gochugaru, gochujang, and sesame oil. Stir well to coat the meat and onion mixture.
  4. Add the kimchi to the pot and sauté for a few minutes until it becomes slightly softened.
  5. Pour in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 20 minutes.
  6. Add the tofu and green onions to the pot. Simmer for an additional 5 minutes.
  7. Serve the kimchi jjigae hot and enjoy the explosion of flavors!
