Creamy Chicken Penne Pasta
Ingredients:
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese, plus extra for serving
- 1/4 cup chopped fresh basil
- Salt and pepper, to taste
Instructions:
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
- Reduce the heat to medium and add the chicken broth. Simmer for 5 minutes, allowing the broth to reduce slightly.
- Stir in the heavy cream and bring to a simmer. Cook for 5 minutes, stirring occasionally.
- Add the cooked penne pasta, chicken, Parmesan cheese, and chopped basil to the skillet. Stir until everything is well coated in the creamy sauce.
- Season with salt and pepper to taste.
- Serve hot, topped with extra grated Parmesan cheese if desired.
